Coconut cake - recipe (including photos)

Ingredients for the dough:
  • 200 grams of flour
  • 125 grams of butter
  • 100 grams of brown sugar
  • 3 spoons of milk
  • 3 spoons of cocoa powder
  • 3 eggs
  • 1 teaspoon of baking powder


Mix the butter with the sugar until creamy.
Add the eggs and mix until well incorporated.


Add the milk and mix well.


In a separate bowl mix the flour with the baking powder and the cocoa powder.


 Add the flour mixture over the eggs/butter composition and mix.



Pour the dough in a tray and let it bake in the preheated oven at 180 degrees Celsius for 15-20 minutes.



Ingredients for the filling:
  • 600 milliliters of milk
  • 150-200 grams of coconut flakes
  • 150 grams of butter
  • 100 grams of sugar
  • 6 spoons of semolina
Put the milk, the butter, the sugar and the semolina at slow fire and, when the composition has thickened, add the coconut flakes and continue mixing while still on the slow fire for another 2 minutes.




Ingredients for the glaze
  • 100 grams of chocolate
  • 100 milliliters of milk
  • 2 spoons of sugar
  • 1 spoon of fresh cream
Put all the ingredients above in a pan and let them at slow fire until creamy.


Ingredients for the syrup:
  • 2 spoons of brown sugar
  • 200 milliliters of milk

In a non stick pan melt the sugar.


Add the milk and mix until the sugar and the milk are combined.
Let it cool.


First add the syrup over the baked dough.


Then add the filling and finally add the glaze.

Pork with garlic in the oven - recipe (including photos)

This was a back-up solution used some time ago, when we planned for a barbecue ... but the weather didn't approve :).

Ingredients:
  • 500 grams of meat
  • 50 grams of butter
  • 50 grams of red wine
  • pepper
  • garlic
  • laurel
  • thyme
  • salt


Mix the meat with all the ingredients above and put it in the oven at 180 Celsius degrees covered in aluminum foil for 90 minutes.

Take out the foil and let the meat cook for another 30-40 minutes.



Additionally you can prepare a mixture from crushed garlic, 100 grams of yogurt, 2 spoons of fresh cream and salt.

Two cookies in Busenberg, Germany

On our way home from Innsbruck we took the national road in Germany and we found this lovely bakery.

It is called Busch and Naab and is located midway between Karlsruhe and Saarbrucken, not far from the French border.

The cookies were very good and fresh.

Raspberry muffins - recipe (including photos)

Ingredients:
  • 110 grams of butter
  • 140 grams of (brown) sugar (or more, depending on taste)
  • 2 eggs
  • 360 grams of flour
  • 2 spoons of baking powder
  • 1 spoon of baking soda
  • 250 milliliters of milk
  • 150 grams of raspberry (fresh or frozen)


Mix the sugar with the butter.



Add the eggs, one by one and mix.


Separately, mix the flour with the baking powder, the baking soda and the salt.

On top of the sugar / egg mixture, pour a third of the flour and a third of the milk and and mix well. Continue alternating the flour and milk with the remaining two thirds.




Add the raspberries and mix slowly.
 




Pour the composition in silicon forms and bake them at 180 degrees Celsius for 20-25 minutes.
